The Park Hyatt's super-fancy Japanese restaurant, Kozue, is a fantastic splurge if you're looking for a exquisite and memorable traditonal Japanese meal. The views over Tokyo are staggering, the service (women in stunning kimonos) is impeccable and the food is intricate and sumptuous.

You can opt for one of the multi-course set menus (which run from about $120 and up per person), which will feature tastes like you've probably never experienced. Try some unique sushi or a gourmet take on the traditional shabu shabu (slivers thinly sliced beef cooked in a hot pot of broth and veggies over a flame), all presented on beautiful earthenware, porcelain and lacquerware created by noted Japanese craftsmen. The sake and wine list is extensive, too.
